2 pounds of fresh cantaloupe cubes (or 6 cups), 2 cups of water, 6 tablespoons of freshly squeezed lime juice (from 2 limes), 3 tablespoons of honey, and 1/4 teaspoon salt. 2 cups club soda, chilled cantaloupe melon balls or cubes for garnish, lime zest twists, for garnish.
Blend cantaloupe, water, lime juice, honey, and salt in a blender until smooth, working in batches if necessary. Press through a strainer; Get rid of solids. Add stressed juice to a pitcher.
When ready to serve, chill. Just before serving, add club soda. Melon balls and lime zest twists can be used as garnish on glasses as you serve it over ice.
